Green Shakshuka with Za’atar & Feta
Instead of using tomatoes as the base for the sauce, we use zucchini, hence the green color. The zucchini will release liquids, softens and give a touch of sweetness to the sauce. It’s a perfect combo with the za’atar spice & feta on top. Here, again, I’m layering the ingredients in the skillet with 1-3 min intervals, just to let the flavors release and get the caramelized flavors going. You can sub 1 leek with 1 onion. It’s a party in a skillet and a very healthy & easy dish to make. Perfect as breakfast, lunch or dinner!

Chicken Soup
Nothing says “home” like the aroma of chicken soup that has been cooking on the stove for hours. It reminds me so much of my childhood and my Mom’s kitchen.
