The thin layers of phyllo dough give it soft crunch on the outside leading to the warm apples filling on the inside.
Green Shakshuka with Za’atar & Feta
Instead of using tomatoes as the base for the sauce, we use zucchini, hence the green color. The zucchini will release liquids, softens and give a touch of sweetness to the sauce. It’s a perfect combo with the za’atar spice & feta on top. Here, again, I’m layering the ingredients in the skillet with 1-3 min intervals, just to let the flavors release and get the caramelized flavors going. You can sub 1 leek with 1 onion. It’s a party in a skillet and a very healthy & easy dish to make. Perfect as breakfast, lunch or dinner!
