Salmon Cutlets
If you are looking for a new and exciting salmon recipe, you are in for a treat! In this dish, the salmon changes its shape and becomes a cutlet; even kids will dare to try. This recipe is easy, delicious, and made out of super healthy ingredients.
Here is what you need:
1 lb. salmon, skin off
1 onion, quartered
2 medium sweet potatoes peeled cut into chunks
2 eggs, scrambled
½ teaspoon sea salt
¼ teaspoon garlic powder
¼ teaspoon dried thyme (optional)
Freshly ground pepper
¼ cup sesame seeds
2-4 tablespoons coconut oil for frying
Let’s do this:
In a food processor place the potatoes and onions. Process until rice like consistency forms. Transfer to a large mixing bowl.
Using the food processor again, no need to wash the container, process the salmon until coarsely chopped. Add the salmon to the bowl.
Add the eggs and seasonings to the bowl. Mix all well until even mixture forms.
Warm up the oil in a skillet over medium-low heat. Using your hands, form cutlets and lightly fry them, about 4 minutes each side. Sprinkle sesame seeds on each cutlet once they are cooking on the first side. Turn to the other side only when you notice that the edges of the cutlets turn white and they feel firm enough to flip.
