Fresh Herbs Salmon
This salmon recipe is everyones favorite! The salmon stays tender and gets all the good flavors from the fresh herbs that cover it. This dish is great for entertaining and look beautiful on the table.
Here is what you need:
1 Skinless salmon
1/4 cup olive oil
1/2 lemon, juice only
4 scallions, white and green parts sliced
Handful parsley, chopped
1/2 cup oregano, thyme or mixed
1/4 cup dry white wine
1/4 cup dry white wine
2-3 garlic cloves, minced
Sea salt
Pepper
Lemon wedges for serving
Let’s do this:
Clean the salmon and pat it dry, season generously with salt and pepper, and spread the minced garlic evenly on top of the fish. Place on a baking/serving dish, or on a cookie sheet lined with parchment paper.
Drizzle the olive oil, lemon juice, and white wine on top, it is ok if the liquids drip to the bottom of the pan. Scoop the liquids from the bottom and drizzle again on the fish and repeat 3-4 times. Set a side for a few minutes to let the fish soak in the liquids and come to room temperature.
Mix the greens; scallions, parsley, thyme and oregano and pile them on top of the salmon. Use both hands to pack them nicely on the fish. Scoop some of the liquids from the bottom of the pan and drizzle gently on top just before baking.
Bake at 425 for about 12-15 minutes. Times might vary according to the thickness of the salmon and your preference for doneness.
