Whole Za’Atar Chicken
This chicken is another staple in my house nowadays. It takes less than 5 minutes to prepare, and the result is crispy on the outside, and juicy and flavorful within. There are three ways you can make this recipe. You can use a whole chicken that has its legs tied with twine. Alternatively, you can cut a whole chicken: using kitchen scissors, slice along the back, then lay the chicken out flat, with the breast up. (Some butchers can do this for you.) Lastly, you can use cut-up chicken pieces; just spread them out evenly on a baking sheet with ½” space between each piece. Whichever method you choose, you will end up with delicious chicken everyone will ask for seconds.
Here is what you need:
1 whole organic chicken (or chicken pieces), washed and patted completely dry, so the seasoning doesn’t wash off
½ cup olive oil
1/3 cup za'atar spice
Garlic head, cut in half horizontally
Salt and pepper
Let’s do this:
1. Line a roasting pan with small rim with parchment paper or foil.
2. Place the chicken in the middle of the pan, sprinkle it with salt and pepper, and place the garlic underneath it.
3. Mix the oil with the za’atar in a small bowl. Spread the paste all over the chicken and if possible, insert some beneath the skin. Use your hands for best results.
4. Bake at 375° F for 90 minutes uncovered and discover a delightful chicken that is crispy on the outside, juicy on the inside.
Seeds for Thought: Za’atar is a Middle Eastern spice blend made from dried thyme, sumac, sesame seeds, and sometimes salt and other spices. You can find it in health food stores or Middle Eastern-type markets, or seek it out online. Za’atar is terrific in salads with olive oil and lemon.
