Salmon with Parsley Aioli
Salmon and other cold-water fish are easy, quick, and substantial dinner options. They are excellent sources of Omega-3 fatty acids and other essential nutrients. For these reasons, I recommend you eat fish at least once or twice a week. Fish cooks in just a few minutes and is a great option for a quick dinner fix. This healthy and aromatic salmon dish uses a few simple ingredients to transform a familiar fish into an aromatic delight. The sesame seeds add crunch and a nutty flavor while the parsley aioli adds a garlic-infused twang.
Here is what you need
Salmon fillets (about 3-5 pieces)
1 tablespoon coconut or olive oil
1 tablespoon olive oil
Salt and pepper
1 tablespoon black and white sesame seeds (or just white sesame)
Parsley aioli:
3-4 tablespoons olive oil
1 cup parsley (or a bunch), chopped
2 garlic cloves, chopped
Juice from ½ lemon
Salt and pepper
Let’s do this
1. Combine all the ingredients for the parsley aioli in a tall jar and process with a hand-held blender until you have a smooth paste. (A small food processor can be used as well.)
2. Pat the salmon dry and coat lightly with a little olive oil. Sprinkle all over with sesame seeds, salt and pepper.
3. Warm a skillet with coconut oil and start searing the salmon, skin side up first, for about 4 minutes. Flip the fillet over when you see the edges of the fish turn a lighter color.
4. Transfer the salmon to a platter and scoop a spoonful of the parsley aioli onto each piece.
