Chicken & Potatoes

Here is a very simple chicken dish with Middle Eastern flavors that everyone will love. It is very similar to the chicken my Mom used to make often. Its simplicity makes it stress-free, and therefore it is a favorite dish in my kitchen as well. You will need a large baking pot with a lid, and you are ready to go!


Here is what you need:

  • 12 pieces of chicken, bone-in (remove the skin)

  • 8-10 small potatoes

  • 2 onions, chunks

  • 1 garlic head cut in half (horizontally)

  • 1/3 cup olive oil

  • 1 tablespoon cumin

  • 1 tablespoon za’atar

  • 1 teaspoon garlic powder

  • Optional: thyme or rosemary sprigs (or any fresh herbs you have on hand)

  • 2-3 teaspoons sea salt

  • Freshly ground pepper


Let’s do this:

1. Clean and pat the chicken dry.

2. Combine all of the ingredients in a large baking dish with a lid. Toss everything with your hands, making sure to arrange the mixture evenly in the dish.

3. Bake covered at 375°F for 1 hour and 15 minutes.
