Tahini Sauce
I use tahini a lot in my kitchen, because it adds a rich flavor and is high in protein and other nutrients, including good fats. Raw tahini is a thick paste made from ground sesame seeds, with no flavoring or water added, and is sold today in many food stores. Your supermarket may also stock prepared tahini sauce (often in the refrigerated section), which is the raw paste mixed with water, lemon, garlic and seasonings. Both versions can be used as a salad dressing, dip, or seasoning for roasted vegetables, fish or chicken. It is very easy to prepare tahini sauce at home.
Here is what you need:
1 container raw tahini
Water in room temperature, the same amount as the raw tahini (use the tahini container and fill it up with water)
Salt and pepper
2 lemons, juice only
4-5 garlic cloves
Optional seasonings, use one at a time or all of them at the same time:
1 cup of parsley, chopped
1 tablespoon cumin
1 teaspoon turmeric
Let’s do this
1. Combine the ingredients in a food processor or blender until the mixture turns lighter in color and has a smooth texture. If you want a thinner sauce, add another ½ cup of water. Keep in mind, the tahini will thicken once it is chilled in the fridge. Transfer to a glass jar and store in the refrigerator for up to a week.
2. Optional: Add either 1 cup of parsley, 1 tablespoon of cumin, 1 teaspoon turmeric, or all of the above to build a more complex flavor.
